Happy Cinco de Mayo!

Since today is Cinco de Mayo, I thought I would try out a Mexican-inspired dish and make my own pico de gallo. It was surprisingly so simple, I can’t believe I haven’t tried this before.

First, gather the following ingredients: 6 roma tomatoes, 1/2 small red onion, fresh cilantro, 1/2 lime, 1/2 jalapeno, garlic, garlic powder, cumin, salt, and pepper:

 

Dice the tomatoes and place in a bowl:

Add minced onion, 3 tablespoons cilantro, and 1/2 jalapeno to the tomatoes:

Squeeze in the juice of the lime:

Next, add the garlic, garlic powder, cumin, salt, pepper and mix:

Cover, refrigerate for 3 hours, and enjoy!

I think this recipe is a little strong on the cilantro, at least for using it as a plain salsa. I think I will be using this for my Qdoba-inspired burritos next time to give them a little more kick. All in all, though, I am satisfied with this recipe.

6 roma tomatoes
1/2 red onion, minced
3 tablespoons fresh cilantro
1/2 lime, juice
1 clove garlic
1/2 jalapeno
dash garlic powder
dash of cumin
salt, pepper to taste

1. Mix all ingredients in a bowl. Cover and refrigerate for 3 hours.
